It is a common thing to eat stringy wonton noodles that are made from authentic flat and thin egg noodles and natural wheat, together with the delicious hot broth and full-filling shrimp soup dumplings. Well, how about the dry one? Sounds very unique right? Introducing, KI.TA’s Dry Wonton Noodles! This recipe of wonton mee is created by our genius Master Chef, Bernard Lee. He unprompted invent this recipe during the COVID-19 outbreak in 2019. Chef Lee observed that the demand for long shelf life foods like instant noodles is increasing due to insufficient food storage during the pandemic. Hence, he came up with this sudden idea to develop one recipe that can fulfil the needs of people at that time, which are KI.TA’s instant wanton mee series.
These dry wanton mee recipes are basically inspired by the Malaysian-style wonton mee, which are commonly served dry, smeared with oyster sauce, garnished with chopped spring onions, and complimented by slices of crispy Char Siu (Chinese BBQ pork) and fried wonton. However, Chef Bernard is really concerned about the Muslim community not only in Malaysia but around the globe, he decided to do some innovations in the recipe, which substitute all the non-Halal ingredients like pork with something more Halal, such as chicken, beef, etc. It is done to give the opportunity to the Muslims to taste the authentic wanton mee servings made by a genuine Chinese chef itself.
Having Malaysian Chinese with a mix of Thai Nyonya blood, Chef Lee decided to infuse all these three cultures into his wonton noodles series, as to show his appreciation towards his ancestries. He also wants to introduce this dish set to the international palate, so that people will know the true flavours of the authentic Nyonya and Peranakan dishes that are super easy to make at home only within 2 minutes!
You just need 2 minutes to prepare the KI.TA’s Dry Wonton Noodles. Once it has been filled with water, just add dry wonton mee into it. Turn on the fire and place the pot on the stove. For two minutes, let the egg noodles boil. Use the colander to filter the boiled noodles when the stipulated time is up and then set them aside for a bit. You may have the condiments ready on the plate while you wait for all the excess water to drain off from the noodles. Simply use scissors to cut the soy sauce and vegetable oil seals off before pouring them into the plate. Then, place the strained wanton mee on it, and stir them well. And you are done!

KI.TA has a very high expectation towards the result of each of our manufactured products. Each of the ingredients used has been strictly inspected and evaluated before being used in making the KI.TA’s products, including wanton noodles. We will only choose high-grade eggs and top-quality wheat to produce our super stringy wonton noodles. Plus, no flavourings and colourings are added during the manufacturing process.
The United Kingdom’s consumer protection laws say that it is not permitted to add any chicken or other forms of meat oil to any food products for a reason. Respectfully, we, therefore, decided to switch the oil condiment used for frying to vegetable oil.
A pack of Dry Wonton Noodles by KI.TA comes with coffee shop potion sizes in 130g (4.58oz) of wonton noodles. During the manufacturing process, the wonton noodles, which are created entirely from premium fresh eggs, will first be dehydrated and weighed before being packed into the transparent airtight plastic sachet by the machine. The technology methodically performs the weighing process in accordance with the fixed weight (130g / 4.58oz).
We employed the best method for processing and creating the best dry wonton noodles during the manufacturing process in order to comply with the government’s standards.

This is the first step in the process of manufacturing dried wonton noodles. The QC (Quality Check) team at KI.TA will first inspect each ingredient that was received from our warehouse. After doing the inspection, we will manufacture wonton noodles using these selected ingredients. During the inspection process, we will carefully examine these ingredients, including the packaging of the raw materials, visual inspection (damaged/spoiled), dimension checking, and many other things.

We will use an industrial weighing scale to weigh only the items that passed inspection. Additionally, in order to ensure accuracy and reduce the uncertainty during the weighing procedure, we calibrated the weighing instrument beforehand. Each ingredient used to make wonton noodles must fall within the KI.TA-specified weight range.

We'll move on to the next process. Here, the ingredients are combined to develop the perfect wonton noodle dough. To mix all of the necessary food ingredients, we will use the manufacturing stand mixer. Instead of using manual labour, we decided to use automation. We're doing this because we want to produce a large number of wonton noodles. Therefore, utilising a mixer machine can hasten the process, ensuring that the product is completely combined, and increase production efficiency significantly.

Prepare the wanton mee into a rough sheet. Then, dust the sheets before putting them in the automatic roller to make them nice thin, wide and flat. Some noodle-making machines have dusters to avoid the dough from sticking together. If your machine doesn’t have an automatic duster, you can still dust your dough manually before putting the wonton noodles in the rolling machine.

Once the noodles have been thinned, proceed to the cutting mechanism to precisely cut the dough sheets into the standard-sized wonton noodles strings. The dough has already been dusted during the thinning process, which makes cutting the dough considerably easier and more efficient.

The noodle strings will undergo a second round of weighing after the cutting process and will be weighed by using a weighing machine in exact approximation to the weight of the dry wonton noodles (130g / 4.58oz).

To remove all of the moisture from the wonton noodles, we decided to dry them in the dehydrator. By doing this, we can guarantee that there is no liquid inside and stop the development of harmful bacteria or germs inside the product. Additionally, it will aid in extending the shelf life of these dried wonton noodles.

The next step involves utilising the noodle packaging machine to pack the noodles. The production team will first place the noodles inside the see-through plastic packet. Noodle packages weigh 130g (4.58oz) each. The wonton noodles will be packed and then go straight to the last section, which is boxing the product.

The condiments were placed into two small transparent plastic pouches using the pouch filling machine. To ensure the end result is clean and that each wonton noodle is handled with the same standard of sanitation, the technique is done one by one at a time. Then the sachets for the condiment and noodles will be combined into one packet and sealed. One clear plastic pouch will therefore hold three different sachets.

The allocated box will be stocked with all of the sealed condiments and the dehydrated wonton noodles. The KI.TA’s dry wonton noodles come in a single packet with a total of four units. To ensure that the boxes are folded and packed properly and that the products are secured, we decide to use only our trained human labour for this procedure. Any mistakes detected during this production process will be discarded right away.
Depending on how the creative team of the manufacturer created the product labelling, they usually come in many different styles and forms, as you can see on the body of any product. The Halal symbol is visible on the front of the KI.TA wonton noodles products, more prominently in the lower left corner of the box. On the left side are the ingredient list and nutritional facts.

Big concerns for KI.TA are the product's quality requirements and the safety of its customers when consuming the wonton noodles. As a result, KI.TA made the decision to pass a few inspections on the biological, chemical, physical, and radioactive hazards in order to earn the HACCP certificate. SAUCE & OIL SACHET: To protect the hygiene of the wonton noodles and food safety, we have divided the condiments into two separate sachets.

All of the ingredients needed to create the dry wonton noodles by KI.TA are in accordance with Syariah law, this makes this product recognised as a Halal food product and safe to consume by all Muslim community around the globe.
