The húntún, also known as Wonton Noodles, is basically a noodle dish which originated from Guangzhou. It is a beautiful city which was somewhere in Southern China, and the emergence of the dish was a long time ago, between the year of 1644 to 1911, during the Qing dynasty. It was then introduced to the other side of China (Hong Kong) after World War II by the Guangzhou’s wonton legend at that era, which was named Mak Woon Chi. He then decided to run a restaurant in Hong Kong, mainly focusing on wonton mee. The famous restaurant, Mak’s Noodle, is actually successfully running until today. Mak Chi-ming, a third-generation descendant of Mak Woon-chi, is currently in charge of the restaurant.
According to the Chinese traditions, most of people believe that wontons means wealth and treasure, as the word “Wonton” in Cantonese (húntún) has quite same sound produced when you pronounce “Hundun”, which apparently means “The Beginning”. Hence, they assumed that eating won ton in the New Year is a sign as a wish of a good start.
Nowadays, this Chinese chicken wanton mee has already spread throughout South East Asia, including Indonesia, Malaysia, Singapore, and Thailand. Every country has their own unique preparation style of wantan mee. What is more shocking is, in Malaysia, every state in this country has different cooking recipes for making wonton noodle soup! The preparation of this Chinese soup dish is totally diverse, resulting from the innovations and improvisations that have been done by the people that are living in the different countries.
To prepare a perfect dish of chicken wonton noodle soup in the traditional way, you must gather all the crucial ingredients needed. You need to go to the grocery store or hyper market to buy the required culinary materials like garlic cloves, black peppercorns, ginger, vegetable oil, chicken thighs, spices, chicken stock, soy sauce, and so on in order to produce one single dish. Plus, the supplies of the cooking ingredients are not always available and these Asian spices are actually quite hard to get. After 2 minutes, quickly turn off the fire and carefully serve the Chicken Wonton Noodle Soup into the bowl. It is actually pure and authentic vegetable oil, which contains saturated fat, whereas chicken oils contain unsaturated fat. Hence, it is a better decision to utilise vegetable oils in the KI.TA’s Chicken Wonton Noodle Soup rather than other products that contain chicken oil.

We have employed the most efficient strategy in processing and developing the high quality Chicken Wonton Noodle Soup during the manufacturing process to comply with the standard that has been set by the authorities.

This is the first step in the manufacturing process of the chicken flavoured wonton noodle soup. Once the ingredients of the chicken won ton noodles have arrived, the KI.TA’s QC (Quality Check) team will make an inspection towards each of the ingredients which came from the KI.TA’s warehouse that will be utilised in the making of won ton noodles. The raw ingredients will be checked in the aspect of its packing condition, visual inspection (damaged/ spoiled), dimension check, and so on.

After inspecting the product, only the one that passed the inspection process will be weighted by using an industrial weighing scale. The weighing system has been calibrated beforehand as to ensure accuracy and minimise any uncertainty during the weighing process. We also precisely measure the load and each wonton noodle ingredient must be within the standard weight range that has been set by the KI.TA

Then, we are going to move onto the next process, which is mixing the ingredients to make a perfect wonton noodle dough. We will use the manufacturing stand mixer to mix all the raw ingredients needed. We decided to use machinery instead of manual labour because we produce the mass quantity of won ton noodles. Thus, utilising a mixer machine will make the product become well combined, fasten the process, as well as increase the efficiency of production in the short amount of time.

The combined dough will be brought to the dough sheeter machine for the thinning process. We deploy this operation towards a certain amount of wanton mee dough at one time because if we thinning a large amount of dough at once, the gluten structure of the dough will be damaged and it will cause the texture of the egg noodles to be impaired. Hence, to improve the quality of the noodles, we decided to thin the noodles at 70% of the original thickness at each round of thinning. Moreover, the dough will be dusted beforehand to avoid the dough from sticking together during the rolling and cutting process. After thinning the egg noodle dough, we will move the thinned dough to the cutting machine.

Once the thinned noodles arrive at the cutting machine, it is time for us to cut the dough sheets into the specific size of wanton mee strings. As the dough has been dusted during the thinning process, the cutting process becomes much easier and efficient. Moreover, we decided to utilise the standard size of noodle strings for our wanton mee to make it convenient to chew and suitable for all of our consumers to enjoy regarding any age.

After the cutting process, the noodle strings then move to the weighing process for the second time. This time, the egg noodle strings will be weighed exactly according to the actual weight of the Chicken Wonton Noodle Soup per unit (95g / 3.35oz). This process is done by using the machinery weighing machine.

In order to remove the moisture from the won ton noodles, we decided to dehydrate the egg noodles by using the dehydrator machine. This is done to eliminate any existence of liquid as well as to avoid any form of unwelcomed pathogens and microbes growing inside the product. The shelf life of this wanton mee also can be lengthened by employing this method.

After dehydrating the noodles, we need to pack the noodle packing machine. The noodles will be packed into the clear plastic sachet before being put into the box package. The weight for each noodle sachet is 95g / 3.35oz per unit. Then, the packed won ton noodles will go straight to the last procedure, which is the boxing process.

As for the condiments, we also packed them into two small clear plastic sachets using the automatic sachet filling machine. We did it separately for the sake of cleanliness as well as to control the hygiene level of the wonton noodles product. The condiments then will be placed inside the plastic sachet together with the noodle sachet. Thus, there will be three different sachets sitting inside one clear plastic pouch- won ton noodles, special sauce, and vegetable oil.

For the last process, all the packed condiments and dehydrated won ton noodles will be packed neatly into the designated green box. There will be 4 units of complete Chicken Wonton Noodle Soup inside one particular box. We decided to deploy our trained human labour for this process to ensure the boxes are properly folded and sealed, and also the safety of the products. Any defects detected by our team during this manufacturing process will be rejected immediately.
