Then, in the kitchen, we can vividly remember the figure of our mother who was busy cooking to fetch the time, finishing off her cooking for dinner as fast as she could. But, at that time, there was no existence of the food condiments yet. So, the generation before us usually do their cooking using the traditional method, which consumes a lot of cost, energy, and time to produce a complete dinner.

Since our food condiments are made under the influence of Malaysian Nyonya and Peranakans, which is basically the mix of Chinese and Malays culture especially in the terms of cooking method and style, our sauces and pastes commonly seem to be used as the culinary ingredients in Chinese cuisine. The top pick condiments that are chosen to be utilised are shown as follow :

Kung Pao, or well known by the Chinese as Gung Bao or Kung Po is the classical Sinchuan Chinese cuisine which originated from the Sinchuan Province, located in the mainland of China. The dish is actually the harmony combination of diced chicken, peanut, vegetables, and chilli peppers. Hence, all the ingredients’ flavours in Kung Pao dish are perfectly compressed in this one specific sauce, which makes it taste just like the Kung Pao itself, complete with the sweet, savoury, and a little bit of a spicy kick after taste.

The literal meaning of Kam Heong is “Golden Fragrance”, which derives from the Chinese Cantonese terms, “Kam Heong (金香)”. It is frankly the combination of the food elements from 3 different races which are Malay, Chinese, and Indian in one dish. This is because the main ingredients used in the making of Kam Heong are the spicy bird’s eye chilli, aromatic curry leaves, dried shrimp, curry powder, and soy bean paste. We literally can see the Malay influence in the usage of bird’s eye chilli, the Indian’s in the curry leaves and curry powder, as for the rest is Chinese’s which are the crispy dried shrimp, as well as the soy bean paste. It is a bit spicy and salty with a smitch of dried prawn and strong curry leaves flavour.
Aside from having a strong influence on Chinese culture, Malay’s cooking style also gives a strong impact towards the customs of Nyonya and Peranakans. This is why KITA decided to create a product that symbolises the Malay’s traditions.
It is the most famous condiment in Malaysia as it has a quite complex flavour, yet complete with all the taste including savoury, sweet, sour and spicy. The chilli sambal sauce is made with a pure combination of chillies together with a few other elements which are blended chillies, shrimp paste, cooking oil, and seasonings. This paste can actually be used in any kind of dish and cuisine as flavourings, for instance you can put it in soup, stews, rice, eggs, and many more. It all depends on your cooking preference.

Despite embracing and highlighting the crucial elements of Nyonya and Peranakans, KITA also released a food paste that influenced the taste of the other side of Malaysia, which are:
This thai paste originated from the Land of Smile itself, which is Thailand. The ingredients of this Thai condiment consist of fresh red chilli, aromatic herbs and spices, cooking oil and some Thai seasonings to taste. It is suitable to be used in the making of the fried rice Thai style.
